Do-Ahead Beef Dinner Casserole
- 2 lb. ground beef
- 1 1/2 c. chopped onion
- 1 1/2 c. chopped celery
- 1 medium green pepper, chopped
- 1 (10 3/4 oz.) can condensed tomato soup
- 1 (8 oz.) can tomato sauce
- 2 to 3 tsp. chili powder
- 2 c. seasoned mashed potatoes
- 1 clove garlic, minced
- 1 1/2 tsp. salt
- 1/8 tsp. pepper
- 1 can drained peas
- 1/2 c. shredded Cheddar cheese
- Brown ground beef, onion, celery and green pepper, stirring until vegetables are tender.
- Pour off drippings; stir in soup, tomato sauce, garlic, chili powder, salt and pepper.
- Pour into ungreased 2 1/2-quart casserole dish.
- Cover and refrigerate (overnight, if desired).
- To bake, place casserole in cold oven. Bake, uncovered, for 45 minutes in moderate oven (350u0b0).
- Spoon potatoes around edge.
- Sprinkle with cheese.
- Bake 10 minutes more.
