Potato Patties Deluxe
- 4 cups (950 ml) mashed potatoes, mashed with butter, milk/cream and seasoned.
- (I like to add sour cream or some cream cheese to my batch for extra flavor and creaminess)
- 2 eggs, lightly beaten
- 2 to 3 strips of bacon, chopped
- 1/2 cup (125 ml) chopped onion
- 2 tbsp (30 ml). chopped green onion
- 2 to 3 cloves garlic, chopped
- 2 tbsp (30 ml). butter or margarine
- enough flour to hold together
- seasoned breadcrumbs for coating
- oil for pan frying
- Begin by sauteing the bacon,garlic and both onions in butter in a pan over medium-high heat, until lightly browned and softened - about 10 minutes.
- For extra flavor and aroma, add a pinch of sugar to bacon,garlic and onions while cooking - this caramalizes everything and concentrates the flavor while bringing out the natual sweetness of the garlic and onions.
- After bacon,garlic and onions are cooked, remove from heat and cool a few minutes.
- In a large seperate bowl, combine the pre-made mashed potatoes, beaten eggs and bacon-onion mixture; gently mix to combine everything.
- Add enough flour to make a good pattie consistency - pretty thick.
- Form into patties and coat lightly with bread crumbs.
- Heat oil in a large pan over medium-high heat and pan fry patties a few minutes, until golden brown and crispy on outside and creamy in the middle.
- Eat while hot!
