Cornbread Dressing
- 1 (8-inch) sq. cubed or crumbled cornbread
- 6 c. or 12 slices soft bread cubes
- 1 1/2 tsp. poultry seasoning
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 c. chopped celery
- 1 tsp. crushed sage
- 1/2 c. finely chopped onion
- 2 diced apples
- 1/2 c. butter
- 1 1/2 to 2 c. broth from chicken or turkey
- 2 eggs, beaten
- 1 c. scrap meat from chicken or turkey
- Heat oven to 325u0b0.
- Mix bread and seasonings together.
- Saute celery, onion and apples in butter in large skillet.
- Add to bread mixture along with broth, meat and eggs.
- Toss until all moistened, if needed.
- Add more broth or water, enough for 12 to 14 pound turkey or bake separately in a 350u0b0 oven until lightly browned.
