Fresh Strawberry Glaze Pie

  1. Prepare and bake pie shell; let cool.
  2. GLAZE: Wash strawberries gently in cold water.
  3. Drain and hull.
  4. In medium saucepan, crush strawberries with potato masher.
  5. Combine sugar and cornstarch; stir into crushed strawberries.
  6. Add 1/2 cup water.
  7. Over low heat, stirring constantly, bring to boiling.
  8. Mixture will be thickened and translucent.
  9. Strain, add butter and cool.
  10. FILLING: Wash strawberries gently in cold water.
  11. Drain and hull.
  12. Measure 3 cups; reserve rest for garnish.
  13. In medium bowl, gently toss strawberries with orange juice; let stand about 30 minutes.
  14. Then arrange in baked pie shell.
  15. Pour cooled glaze over strawberries.
  16. Refrigerate until well chilled--about 2 hours.
  17. Just before serving, whip cream until stiff; fold in confectioners' sugar.
  18. To serve, garnish pie with reserved strawberries and whipped cream.
