Miss Nell Callis' Dark Fruit Cake
- 1 lb. butter
- 3 c. sugar
- 6 eggs
- 5 c. flour
- 2 tsp. baking powder
- pinch of salt
- 1 lb. mixed fruit
- 1/4 lb. red and green candied cherries
- 1 lb. chopped dates
- 6 apples, chopped
- 3 oranges, chopped
- 1 lb. nuts (pecans and walnuts)
- 1 lb. coconut
- 1 can crushed pineapple, drained
- 1 small jar sweet red cherries
- 2 boxes raisins, which have been soaked and floured
- 1 small jar mincemeat
- 1 Tbsp. cinnamon
- 1/2 tsp. nutmeg and allspice
- Cut up all fruit together; add coconut, pineapple, sweet cherries and mincemeat.
- Let stand in fridge overnight.
- Next day, mix cake ingredients as usual.
- In a very large pan, stir the fruit into cake mixture.
- Grease and line with wax or brown paper 2 medium tube cake pans and one loaf pan.
- Cook at 300u0b0 with a shallow pan of water in oven (keep water in this at all times) for 2 to 3 hours.
- Keep testing for doneness.
