Dairy Free Coconut Whipped Cream

  1. I found this recipe at ohsheglows.com.
  2. I did however, write it down in my own words.
  3. Put can of coconut milk in fridge for 4-12 hours(overnight is easy)
  4. Turn coconut milk can upside down.
  5. Open can with a can opener.Remember, the can is upside down!
  6. All of the watery milk will be at the top.
  7. Pour into a cup.
  8. You won't use this for the whipped cream, but I suggest keep it for something else.
  9. Pour the solid milk (this will be at the bottom of the can) into a large bowl.
  10. Whip with a mixer on high.
  11. Slowly add sugar and vanilla.
  12. Whip until soft peaks form.
  13. This will keep in the fridge for several days.
  14. You can use as frosting.
  15. I used it as frosting on red velvet cupcakes made with coconut oil.
  16. Enjoy!
