Jumbo Fruited Oatmeal Cookies
- 3/4 c. butter or margarine, softened
- 3 eggs
- 3/4 c. thawed frozen unsweetened apple juice concentrate
- 1 1/2 tsp. vanilla
- 1 1/2 c. all-purpose flour
- 1 1/2 c. uncooked rolled oats
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/2 tsp. ground cinnamon
- 1/2 tsp. allspice
- 1 (6 oz.) pkg. dried mixed fruit, chopped (about 1 1/3 c.)
- 1/2 c. coarsely chopped nuts
- Preheat oven to 350u0b0.
- Beat butter in large bowl until creamy. Blend in eggs, apple juice concentrate and vanilla.
- Add flour, oats, baking soda, salt, cinnamon and allspice; mix well.
- Stir in dried fruit and nuts.
- Drop scant 1/4 cupfuls of dough, 3 inches apart, onto lightly greased cookie sheets; flatten slightly.
- Bake 12 to 14 minutes or until edges are lightly browned.
- Cool 1 minute on cookie sheets; transfer to wire rack to cool completely. Store in tightly covered container.
- Makes 1 1/2 dozen jumbo cookies.
