Barbecued Mango Cheeks

  1. Preheat a barbecue plate on medium-high heat.
  2. Score 3 vertical lines and 3 horizontal lines into each mango cheek (don't cut all the way through).
  3. Brush cheeks generously with rum.
  4. Place sugar on a plate.
  5. Dip cut side of mango cheeks into sugar to form a thick coating.
  6. Place a sheet of non-stick aluminum foil (not the regular kind) on the hot barbecue plate.
  7. Place mango cheeks, sugar side down, on baking paper.
  8. Barbecue mango for 4 to 5 minutes or until golden.
  9. Turn mango skin inside out.
  10. Place on plates.
  11. Drizzle with caramel from foil.
  12. Serve with ice-cream and lime wedges.
