Brown Sugar Candied Bacon
- 1 cup Brown Sugar
- 16 slices Thick Cut Bacon
- 1 teaspoon Coarse Sea Salt Or Fleur De Sel
- 1/2 cups Chocolate Melting Wafers
- Preheat oven to 400 degrees F. Line a baking sheet with aluminum foil or parchment paper.
- Place a wire cooling rack over the foil/paper on the baking sheet.
- Set aside.
- Put brown sugar into a shallow dish.
- Working with one slice of bacon at a time, generously coat bacon with brown sugar, using your fingers to rub it into the meat so that the sugar sticks.
- Once coated, thread the bacon onto a wooden skewer and place the skewer onto the cooling rack.
- Do not crowd the cooling rack.
- You may have to cook the bacon in two batches.
- Place the baking sheet with the rack of bacon into the oven and bake for 12 minutes.
- Turn bacon skewers over and bake for an additional 67 minutes.
- Remove from the oven and sprinkle with sea salt or fleur de sel, on one side, while it is hot.
- Cool on the wire rack.
- Put the chocolate melting wafers in a microwave safe bowl and cook for 30 seconds.
- Stir.
- Cook for an additional 30 seconds.
- Remove the chocolate from the microwave and stir until smooth.
- Put the chocolate into a Ziploc bag, pushing the chocolate into one corner.
- Use scissors to cut the tip off the corner of the bag.
- Drizzle the melted chocolate over the bacon and put in the refrigerator until the chocolate is set.
