Cornbread Dressing(May Be Halved)
- 3 c. regular cornmeal
- 1 c. plain flour
- 5 eggs
- 1/2 c. chopped onion
- 2 tsp. salt
- black pepper to taste
- 1 tsp. soda
- 2 pt. buttermilk
- 2 Tbsp. (1 each sage, thyme)
- 1 c. chopped celery
- hot turkey or chicken broth
- boiled chicken parts
- In large bowl, put cornmeal.
- Sift flour, soda and salt.
- Add to cornmeal.
- Add onion and beaten eggs.
- Add enough buttermilk to make a soft but not thin batter.
- Add celery.
- Pour into large greased baking dish and bake 30 to 40 minutes at 400u0b0.
- Take out of oven; pour broth in while tearing dressing with potato masher. Add enough broth to make a very soft batter.
- Add sage, thyme, black pepper and chicken parts, boiled, boned and chopped.
- Pour into large greased baking dish.
- Bake at 375u0b0 for 40 minutes.
