Sweet And Sour Pork (Or Chicken)
- 1 lb. pork (or chicken), cut in 3/4 inch cubes
- 2 Tbsp. cooking oil
- 1 green pepper, cut in 3/4-inch cubes
- 1 firm medium tomato, cubed
- 1 can pineapple chunks, cut in half
- 1 (8 oz.) can water chestnuts, drained and sliced thin
- 1 1/2 Tbsp. soy sauce
- 1 1/2 Tbsp. vinegar
- 2 Tbsp. cornstarch
- 1 c. water
- Heat a heavy pan or electric skillet.
- Add oil and heat.
- Add pork and cook over high heat, stirring constantly, for 1 minute. Cover, turn heat to medium and cook 5 minutes.
- Uncover; add green pepper and cook 2 minutes.
- Add tomato and pineapple chunks; cook for 1 minute.
- Add water chestnuts.
- Meanwhile, you have put the cornstarch in a little bowl, added the soy sauce, vinegar and water and mixed them well.
- Add this mixture to the pot and cook, stirring, until thickened.
- This recipe will probably be enough for only 3 or 4, so double it for 6 or 8, and serve with rice.
