Chipotle Carne Guisada (Beef Stew Meat Braised W/Chipotle)

  1. Season the beef stew meat with the cumin, salt and pepper.
  2. Set aside.
  3. In a large frying pan, heat oil and add the onions, bell pepper and tomatoes on medium high heat.
  4. Saute for about 5-7 mins or until translucent.
  5. Add the seasoned meat and brown (on High heat) for about 7-10 minutes.
  6. Add 2 cups of hot water to the pan.
  7. Add the bullion, chipotle sauce/pepper Sazon Goya and stir.
  8. Cover and cook on medium high heat for about 45 mins or until most of the liquid is absorbed then uncover and add 1 more cup of water.
  9. Cover and simmer for another 30 mins or until liquid is almost absorbed.
  10. Uncover and add another 1 cup of water and cilantro.
  11. Cover and simmer for 20-30 mins more.
  12. Turn heat off and let stand, covered, for another 10-15 mins for liquid to thicken.
  13. Serve with rice.
