Simple Veggie Soup
- 3/8 qt. water (can vary)
- 1/8 qt. salt
- 1/8 qt. pepper
- 1/8 qt. barley
- 1/8 qt. butter
- 1/8 qt. carrots, cubed
- 1/8 qt. onions, chopped
- 1 potato, diced
- 1/4 qt. tomato juice
- Add peas, corn, celery,
- any other vegetables you might want
- Bring water, salt, and pepper to a boil.
- Add barley and reduce heat, and cover.
- Melt butter over medium heat.
- Add vegetables and saute until lightly browned.
- Add to the simmering ingredients, and simmer for half an hour.
- Add tomato juice and season to taste.
