A Catchall Casserole Recipe
- 1 c. Onion, finely minced
- 1 Tbsp. Butter or possibly margarine
- 2 c. Cooked chicken, diced (or possibly turkey, ham, pork or possibly roast beef)
- 1 c. Cooked mixed vegetables
- 1 can Cream of chicken soup, (10 3/4 oz)
- 1 tsp Poultry Seasoning (For Chicken Or possibly Turkey, Only)
- 1 tsp Celery salt
- 1/8 tsp Black pepper
- 1/2 c. Chicken broth
- 1 c. Grated Cheddar cheese
- Place onion and butter in a 2 qt casserole.
- Cover with wax paper.
- Microwave at high (100%) till tender, 2 to 3 min.
- Combine all ingredients except cheese, with onions.
- Cover with wax paper.
- Microwave at medium high (70%) till heated through, 12 to 14 min.
- Sprinkle with cheese.
- Microwave at medium high (70%) till cheese is melted, 3 to 4 min.
- Makes 6 servings.
- NOTE: If using ham, use cream of asparagus soup.
- If using leftover roast pork, use cream of celery soup.
- If using leftover roast beef, use cream of mushroom soup.
