French Sesame Bread
- 6 plus c. flour
- 1 Tbsp. salt
- 2 pkg. yeast
- 2 1/2 c. very warm water
- 1 egg white
- 1 Tbsp. cold water
- 1 Tbsp. sesame seed
- Combine 2 1/2 cups flour, salt and undissolved yeast.
- Add warm water to dry ingredients and beat 2 minutes at medium speed, scraping bowl.
- Add 1 cup flour and beat 2 minutes at high speed. Stir in enough additional flour to make a soft dough.
- Knead 4 to 5 minutes until smooth and elastic.
- Place in greased bowl, turn to grease top.
- Cover and let rise until doubled (1 to 1 1/2 hours).
- Punch down dough; divide into 3 balls.
- Place on greased baking sheets which have been sprinkled with corn meal.
- Make several gashes on top of each loaf.
- Cover; let rise until doubled (about 1 hour).
- Bake at 450u0b0 for 20 minutes.
