Holiday Cheer Eggnog

  1. In a heavy 2 quart saucepan whisk together eggs, honey and salt.
  2. Gradually add 2 cups milk.
  3. Cook and stir over medium-low heat for 12-15 minutes.
  4. or until mixture coats the back of a spoon (do not boil!
  5. ).
  6. Pour into a large heatproof bowl; stir in remaining milk and vanilla.
  7. Place bowl over ice-water bath, stirring frequently until mixture is cooled about 15 minutes.
  8. Cover and refrigerate for at least 3 hours.
  9. When reado to serve, whisk in your favorite flavoring.
  10. FLAVORING SUGGESTIONS:.
  11. Stir in 1/2 -1 cup of rum or brandy or a combination of both.
  12. Stir in 1 1/2 teaspoons instnt coffee granules, dissolved in 1 tablespoons hot water or 1-2 teaspoons rum extract.
  13. Stir in 2 cups softened vanilla ice cream and blend with whisk or mixer.
  14. Replace half milk with Amaretto, French Vanilla or Irish Creme flavored dairy blend for coffee.
  15. TIP: Eggnog may be covered and stored in the refrigerator for several days.
  16. To serve, keep bowl of eggnog on ice and serve within 2 hours.
  17. For creamy eggnog, add 2 cups whipped cream.
