Zucchini Pie
- 1 small zucchini, chopped (1 c.)
- 1 large tomatoes, chopped (1 c.)
- 1 medium onion, chopped (1/2 c.)
- 1 cup swiss cheese, shredded
- 12 cup original Bisquick baking mix
- 13 cup parmesan cheese, grated
- 1 cup milk
- 12 teaspoon salt
- 18 teaspoon pepper
- 2 eggs
- Preheat oven to 400.
- Spray 9" pie plate with cooking spray.
- Layer zucchini, tomato and onion in pie plate.
- Sprinkle with Swiss cheese.
- Stir remaining ingredients in medium bowl with wire whisk or fork until blended.
- Pour into pie plate.
- Bake about 35 minute or until knife inserted in center comes out clean.
- Let stand 5 minute before serving.
