Microwave Polenta
- 2 13 3/4-ounce cans low-salt chicken broth
- 3/4 cup yellow cornmeal
- 5 strips bacon, cooked, crumbled (optional)
- 1/4 cup plus 2 tablespoons grated Romano
- 3 tablespoons butter
- 1/2 teaspoon pepper
- Whisk together broth and cornmeal in large bowl.
- Cook in microwave on High until thickened, about 15 minutes, whisking every 5 minutes to combine.
- Stir in bacon, Romano, butter and pepper and serve.
