Watermelon Mojitos

  1. Use a mortar and pestle to smash mint leaves.
  2. Remove the rind and seeds from watermelon.
  3. Put fruit in a food processor fitted with the steel blade and puree.
  4. Put the mashed mint in a large pitcher with 2 cups of the watermelon puree, the rum, simple syrup, and lime juice.
  5. Stir to combine.
  6. Put ice cubes in glasses, pour mojito mixture over, and garnish with mint.
