Arugula Pesto Recipe
- 2 c. Arugula leaves
- 2 x Garlic cloves
- 1/4 c. Parmesan or possibly Asiago cheese
- 1/4 c. Extra virgin olive oil
- 1/8 c. Pine nuts, toasted
- In blender or possibly food processor place arugula, garlic and cheese and blend till smooth.
- Slowly add in extra virgin olive oil and nuts.
- Blend till desired consistency.
- Spread on a pizza crust, top with cheddar cheese, onions and fresh tomato slices.
- Or possibly, simply toss with cooked pasta.
