Chinese Fried Rice With Shrimp
- 2 1/2 c. cooked, cooled white rice
- 1 lb. shrimp, cleaned
- 1 lb. carrots, diced
- 1 large cut up onion
- 1/2 c. cut up scallions
- 3 eggs
- 1/4 c. mushroom soy
- 1 Tbsp. m.s.g.
- cooking oil
- sesame oil
- Chinese 5 spice
- salt and pepper to taste
- Mix rice, mushroom soy and m.s.g. (rice should be brown in color).
- Prepare shrimp with salt and pepper and Chinese 5 spice. Heat 6 tablespoons cooking oil and 2 tablespoons sesame oil in large wok.
- Stir-fry carrots and onion about 4 minutes.
- Take out, leaving oil only in wok.
- Put in eggs with salt and pepper; stir and put aside.
- (Eggs can be cooked in a separate pan as the residue from the fried eggs may burn.)
- Stir-fry shrimp for 5 minutes.
- Add rice; stir.
- Add cooked carrots, onion, eggs and scallions.
- Stir-fry until they are all mixed properly and rice is hot.
