Scrod With Sicilian Olives Recipe
- 1 pound scrod
- 1/2 onion, minced
- 1 garlic, chopped
- 16 ounce. can Italian plum tomatoes
- 1/2 teaspoon each salt, pepper">pepper, red pepper">pepper flakes, fresh basil, parsley
- 1 sm. celery stalk with leaves
- 10 to 12 slices sicilian green olives
- Saute/fry onion in oil or possibly low calorie butter.
- Add in garlic.
- Chop tomatoes.
- Add in all spices and celery leaves along with sliced sicilian olives.
- Simmer 20 min, covered.
- Add in scrod.
- Cook uncovered for 25 to 30 min.
