Short Ribs Contadina
- 2 tablespoons olive oil
- 4 lbs beef short ribs
- 1 onion, coarsely chopped
- 1 (12 ounce) cantomato paste with Italian spices
- 2 23 cups water
- 12 teaspoon salt
- ground pepper
- 2 carrots, peeled and cut into 2 inch pieces
- Heat oil in large saucepan over medium heat.
- Add ribs; cook until browned on both sides.
- Add onion and cook for 1 minute.
- Combine tomato paste, water, salt and pepper in small bowl.
- Pour over ribs; cover.
- Simmer over low heat for 1 1/2 hours.
- Add carrots; simmer, covered, for additional 30 minutes or until ribs are tender.
