Melon Mold Salad

  1. Combine gelatin, sugar, 1 cup orange juice and mint in double boiler.
  2. Heat to boiling.
  3. Stir until gelatin is dissolved. Remove from heat.
  4. Add lemon juice, 1 cup orange juice and ice cubes.
  5. Stir until mixture begins to thicken.
  6. Remove any unmelted ice cubes and mint leaves.
  7. Gently fold in fruit.
  8. Turn into 6-cup ring mold; cover and chill until set.
  9. Place on lettuce leaves. Garnish with fruit and mint leaves.
  10. Serve with favorite fruit salad dressing or mayonnaise.
