Nutty Lime & Coconut Bites
- 13 cups Roasted, Unsalted Pistachios
- 13 cups Raw Cashews
- 13 cups Sliced Roasted, Unsalted Almonds
- 23 cups Shredded Unsweetened Coconut
- 1 cup Medjool Dates
- 2 Tablespoons Lime Juice
- 1.
- Place all of the nuts and coconut in a food processor, put the lid on and process until they are coarsely chopped.
- 2.
- Add dates into the nut and coconut mix and chop again.
- A sticky dough should start to form.
- 3.
- Add lime juice into the mixture and blend one last time.
- 4.
- Scoop out a small bit of dough and shape it into a small ball.
- Place on a sheet of parchment.
- 5.
- Repeat until you have formed all of the dough into balls.
- 6.
- Makes 12 larger balls or 20 smaller bites.
- 7.
- Enjoy immediately or store them in the refrigerator.
