Sole En Gougons

  1. Cut fillet of sole diagonally into 1/2 inch strips.
  2. Beat together egg yolk, milk, salt and pepper until well blended.
  3. Soak fish strips in egg mixture for a few minutes.
  4. Coat fish with bread crumbs.
  5. Roll each piece between palms to get a rounded strip.
  6. Fry in shallow hot oil (375 degrees F) until golden brown (3 minutes).
  7. Drain on paper towels.
  8. Serve on warm platter.
