Grilled Citrus Chicken
- 4 chicken breasts, skinless, boneless
- 1 medium orange, sliced
- 1 small eggplant, cut into 1 inch slices
- 1 large red bell pepper, cut into 1 inch pieces
- 1 medium zucchini, quartered lengthwise
- 1 small sweet onion, cut in 1/2 inch piecces
- 34 cup orange juice
- 14 cup lemon juice
- 3 tablespoons cooking oil
- 2 tablespoons Worcestershire sauce
- 34 teaspoon ground cumin
- 12 teaspoon onion powder
- 14 teaspoon salt
- 14 teaspoon black pepper
- 2 garlic cloves, minced
- Place chicken in plastic bag.
- combine marinade ingredients and pour over chicken.
- Add the orange slices to the bag.
- Set aside in the refrigerator for 6-24 hours.
- Drain, discarding marinade.
- Place chicken and vegetables on grill rack.
- Grill for 12-15 minutes or until no longer pink.
- Grill vegetables 8-10 minutes or until tender.
