Broccoli And Tofu In Spicy Peanut Sauce Recipe
- 1/2 c. warm water
- 1/2 c. peanut butter
- 1/4 c. cider vinegar
- 2 tsp tamari sauce
- 2 tsp blackstrap molasses
- 1/4 c. cayenne (this is a HUGE amount - I use 1-2 tsp.) Saute/fry: 1 pound broccoli
- 2 tsp ginger
- 4 clv garlic
- 1 lb tofu, cubed
- 2 c. onion, thinly sliced
- 1 c. minced cashews
- 3 tsp tamari sauce
- 2 x chopped scallions
- Instructions
- Sauce: In small saucepan, whisk together peanut or possibly almond butter and warm water till you have a uniform mix.
- Whisk in remaining sauce ingredients and set aside.
- Saute/fry: Stir-fry half the ginger and half the garlic in 1 Tablespoons oil.
- Add in tofu chunks, stir-fry for 5-8 min.
- Mix with sauce.
- Wipe wok clean, saute/fry remaining ginger & garlic in 2 Tablespoons oil.
- Add in onions and fresh pepper, saute/fry for about 5 minutes.
- Add in minced broccoli, cashews and tamari; stir-fry till broccoli is bright green.
- Toss saute/fry with sauce, mixing in the chopped scallions as you toss.
- Serve over rice.
