Corn Fritters
- 1 (16 oz.) can whole kernel corn, drained
- 2 eggs
- 2 Tbsp. finely chopped onion
- 1 tsp. sugar
- 1/4 tsp. ground nutmeg
- Crisco oil for frying
- 1 c. all-purpose flour
- 1 c. dairy sour cream
- 2 Tbsp. Crisco oil
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1/8 tsp. white pepper
- Combine all ingredients except Crisco oil for frying in medium mixing bowl.
- Mix well.
- Let stand 1 hour.
- Heat 2 to 3 inches Crisco oil in deep fryer or large saucepan to 350u0b0.
- Drop batter by heaping tablespoonfuls into hot Crisco oil.
- Fry, a few at a time, 5 to 6 minutes, or until deep golden brown.
- Drain on paper towels. Repeat with remaining batter.
- Serve immediately or keep warm in 175u0b0 oven.
- Makes 14 to 16 fritters.
