Jose Andres' Caprese Sandwich
- 1 handful baby heirloom tomatoes
- 2 tbsp. olive oil
- salt
- Pepper
- 2 tbsp. sun-dried tomato pesto
- 2 slice rustic bread
- 2 oz. fresh mozzarella
- A few small leaves of fresh basil
- Cut the tomatoes in half and toss with a bit of olive oil.
- Season with salt and pepper to taste.
- Set aside.
- Spread the pesto on each slice of bread.
- Place mozzarella in between the bread, with the pesto on the inside.
- Lightly oil and heat a skillet over medium-high heat.
- Cook the sandwich until it's golden brown and the cheese is melted.
- Remove from heat and top with the baby tomatoes and basil.
