Vegetable Burgers

  1. In a blender, finely chop celery, onion, scallion and garlic or finely dice them by hand.
  2. Set aside.
  3. In a large mixing bowl, combine barley, chickpeas, oatmeal, salt, paprika, basil, soy sauce and pepper.
  4. Mix them thoroughly with a wooden spoon or with your hands.
  5. Add the chopped onion, celery, scallion and garlic to the barley mixture and mix again.
  6. Shape into six burgers.
  7. Heat olive oil in a nonstick skillet.
  8. Add burgers and brown 5 to 7 minutes on each side or bake the patties at 350u0b0 on a lightly oiled cookie sheet for 25 minutes.
  9. Makes 6 patties.
