pineapple-nut cake
- 1/2 cup butter or margarine
- 1 cup sugar
- 2 eggs separated
- 2 tsp baking powder
- 1/2 cup all purpose flour
- 1 cup milk
- 1 tsp vanilla
- 1 cup chopped pecans
- 24 graham crackers crushed (the hole pieces, like it has 4 on a cracker,that still one cracker)
- 1 large can pineapples crush
- 3/4 cup sugar white
- 1/2 cup brown sugar
- preheat oven at 350 bake on 350 .
- using oblong cake pan or 2, 9 inch pan, spray with cooking oil or grease pan wirh oil
- cream sugar and margarine, add egg yolks.mix baking powder with graham crackers and flour, mix vanilla with milk mixture and the dry mixture to the sugar mixture.
- add nuts, beat egg whites untill it forms a peak, fold in egg whites and nuts, untill well mixed do not beat together, make sure you fold it in well.
- pour into pan, if using 2 pans evenly divide the mixture.
- bake for 30 minutes
- for the topping - can of crushed pineapples (drain half of the juice) and sugars, put into a large saucepan and cook untill it thickens up about 20 minutes.
- careful not to get any on you ,will burn you.
- spread topping over cake cut into square pieces.
- when ready to serve put whipped topping optional.
