Bolognese Stuffed Mushrooms Recipe
- 1 lb beef mince
- 4/6 large flat open c. mushrooms
- jar of bolognese sauce
- onions
- aubergine (eggplant)
- potatoes
- courgette (zucchini)
- carrot (any other suitable vegetables)
- whole garlic cloves
- mozzarella cheese
- cheddar cheese
- half pint chicken stock
- half pint white wine
- Cut vegetables to a uniform size approx 1" cubes.
- Put in oiled baking tray, add in char grill flavour spice & bake in a warm oven for 30 mins.
- Meanwhile, finely chop the onions, fry and caramelise, add in mince, and brown.
- Stir in bologneses sauce, gently simmer for a few min.
- Place mushrooms into the oven dish with the vegetables.
- Add in bolognese sauce to mushrooms.
- Sprinkle mixed grated cheese on top of mushrooms; pour stock and wine into dish.
- Return to oven 15-20 mins or possibly till cheese is melted and browning.
- Serve with crusty bread for juices.
