Warm Quinoa Salad

  1. In a deep skillet heat oil over medium heat.
  2. Add onions, peppers and celery.
  3. Cook 4 minutes or until onions turn translucent.
  4. Add in garlic, salt and pepper.
  5. Cook 1 minute.
  6. Add in water and bring to a boil.
  7. Stir in quinoa and cover.
  8. Reduce heat to simmer and cook 15 minutes.
  9. Place into a large serving bowl and mix in parsley and olives.
  10. Top each serving with grated cheese if you prefer.
  11. Serve warm.
  12. For version two.
  13. This is so easy to change up.
  14. You will cook the recipe in the exact same manner.
  15. Just toss in uncooked shrimp when water comes to a boil before adding in quinoa.
  16. Cover and simmer the same way.
  17. Same timing.
  18. Toss in lemon zest and juice when adding in parsley and olives.
