Turkey Basil Summer Rolls

  1. Heat a large non-stick skillet over medium-high.
  2. Coat pan with cooking spray.
  3. Add turkey and next three ingredients to pan; cook 5-7 minutes, or until turkey is no longer pink.
  4. Combine turkey and coleslaw mix in a medium bowl.
  5. Add hot water to a large, shallow dish to a depth of 1 inch.
  6. Place 1 rice paper sheet in dish; let stand 30 seconds, until just soft.
  7. Place sheet on a flat surface.
  8. Arrange 2 basil leaves on top third of sheet.
  9. Arrage 1/3 cup turkey mixture on bottom third of sheet.
  10. Folding sides of sheet over filling and starting with filled side, roll up jelly-roll fashion.
  11. Gently press seam to seal.
  12. Place roll, seam side down, on a serving platter, and cover with a damp towel.
  13. Repeat procedure with remaining sheets, basil, and turkey.
  14. Slice each roll in half diagonally.
  15. Serve with sesame-ginger dressing.
