Turkey Basil Summer Rolls
- cooking spray
- 34 lb lean ground turkey
- 12 teaspoon Thai seasoning
- 14 teaspoon black pepper
- 18 teaspoon salt
- 34 cup cabbage and carrot coleslaw mix
- 6 (8 inch) round sheets rice paper
- 12 basil leaves
- 6 tablespoons low-fat sesame ginger salad dressing
- Heat a large non-stick skillet over medium-high.
- Coat pan with cooking spray.
- Add turkey and next three ingredients to pan; cook 5-7 minutes, or until turkey is no longer pink.
- Combine turkey and coleslaw mix in a medium bowl.
- Add hot water to a large, shallow dish to a depth of 1 inch.
- Place 1 rice paper sheet in dish; let stand 30 seconds, until just soft.
- Place sheet on a flat surface.
- Arrange 2 basil leaves on top third of sheet.
- Arrage 1/3 cup turkey mixture on bottom third of sheet.
- Folding sides of sheet over filling and starting with filled side, roll up jelly-roll fashion.
- Gently press seam to seal.
- Place roll, seam side down, on a serving platter, and cover with a damp towel.
- Repeat procedure with remaining sheets, basil, and turkey.
- Slice each roll in half diagonally.
- Serve with sesame-ginger dressing.
