Grilled Cedar Plank Salmon with a Corn and Red Pepper Relish

  1. Heat 1 tablespoon oil in a small saucepan over medium-high.
  2. Add the diced onion and saute until it starts to soften, 3 minutes.
  3. Season with salt and pepper.
  4. Toss in the corn and diced red pepper, add the butter and continue to saute until tender, 3 minutes.
  5. Throw in another pinch of salt and pepper.
  6. In the meantime, lay the salmon fillets on the cedar plank.
  7. Drizzle the remaining tablespoon of oil over the fish, along with a pinch of salt and pepper.
  8. Grill until the fish is cooked through, about 10 minutes.
  9. Serve salmon over the corn and pepper relish.
  10. Garnish with fresh parsley and a good squeeze of lemon juice.
  11. Dulish.
