Grilled Cedar Plank Salmon with a Corn and Red Pepper Relish
- 2 Tablespoons Extra Virgin Olive Oil, Divided
- 1 whole Small White Onion, Finely Diced
- 1 cup Fresh Or Frozen Corn
- 1 whole Red Bell Pepper, Diced (stem, Seeds And Ribbons Discarded)
- 2 Tablespoons Butter
- 2 whole Fresh Salmon Fillets
- 1 whole Cedar Plank
- 1 pinch Coarse Salt And Freshly Ground Pepper
- Fresh Parsley, For Garnish
- 1 whole Lemon
- Heat 1 tablespoon oil in a small saucepan over medium-high.
- Add the diced onion and saute until it starts to soften, 3 minutes.
- Season with salt and pepper.
- Toss in the corn and diced red pepper, add the butter and continue to saute until tender, 3 minutes.
- Throw in another pinch of salt and pepper.
- In the meantime, lay the salmon fillets on the cedar plank.
- Drizzle the remaining tablespoon of oil over the fish, along with a pinch of salt and pepper.
- Grill until the fish is cooked through, about 10 minutes.
- Serve salmon over the corn and pepper relish.
- Garnish with fresh parsley and a good squeeze of lemon juice.
