Bacon And Eggs Du Jour

  1. Saute onion and green pepper in 1 tablespoon butter. Add soup. Gradually stir in milk and heat.
  2. Add remaining butter to water. Heat until butter is melted.
  3. Combine hot liquid with bread stuffing mix.
  4. Arrange 1/3 of stuffing in a buttered 2-quart casserole. Top with half the egg sections and 1/3 of soup mixture. Repeat, using all the eggs. Top with remaining stuffing and soup mixture.
  5. Sprinkle crumbled bacon over top.
  6. Bake in moderate oven at 350u0b0 for 30 minutes.
  7. Yields 8 servings.
