Rosy Coleslaw With Apple and Green Onion
- 4 cups shredded red cabbage
- 12 cup shredded carrot
- 4 tablespoons green onions, finely chopped
- 2 tablespoons fresh lemon juice
- 1 tablespoon maple syrup
- 1 tablespoon olive oil
- 1 large tart apple, peeled and finely chopped
- salt and pepper
- Toss all ingredients together except the salt and pepper.
- Chill 30 minutes, season to taste with salt and pepper and serve.
