Banana Nut Bread
- 1/4 c. shortening
- 3/4 c. sugar
- 1 egg
- 2/3 c. mashed ripe banana
- 2 c. all-purpose flour, divided
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1/2 c. milk
- 1 1/2 tsp. vanilla extract
- 3/4 c. chopped pecans
- Cream shortening; gradually add sugar, beating well.
- Add egg; beat well.
- Add banana and mix until smooth.
- Combine 1 3/4 cups flour, baking powder, soda and salt; add to creamed mixture alternately with milk, beginning and ending with flour mixture. Stir in vanilla.
- Dredge pecans in remaining flour; stir into batter.
- Pour batter into a greased and floured 9 x 5 x 3-inch loaf pan.
- Bake at 350u0b0 for 1 hour.
- Cool in pan for 10 minutes. Remove from pan and cool completely on wire rack.
