Broccoli Supreme Basic Omelet Recipe
- 1 pkt frzn minced broccoli - (10 ounce) cooked according to
- 1 pkt directions
- 1 pkt cream cheese - (3 ounce) cubed
- 1/4 tsp seasoned salt
- 6 x Large eggs
- 6 Tbsp. water
- 3/8 tsp salt
- 1/4 tsp freshly-grnd black pepper
- 3 Tbsp. butter divided
- 12 x thin slices tomato
- In a medium saucepan, combine cooked, liquid removed broccoli with cream cheese and seasoned salt.
- Heat over medium heat till cheese is melted.
- Hold hot while preparing omelets.
- Beat Large eggs, water, salt and pepper till well blended.
- In a 7- to 10-inch omelet pan or possibly skillet over medium-high heat, heat 1/3 of the butter till just warm sufficient to sizzle a drop of water.
- Pour in 1/3 of egg mix.
- Mix should set immediately at edges.
- Carefully push cooked portions at edges toward center so uncooked portions can reach warm pan surface, tilting pan and moving cooked portions as necessary.
- While top is still moist and creamy-looking, fill with about 1/2 c. broccoli mix and 4 slices of tomato.
- Fold pancake in half or possibly roll.
- Invert onto plate with a quick flip of the wrist or possibly slide from pan onto plate.
- Repeat two more times with remaining ingredients.
- This recipe yields 3 servings.
