Chunky Chicken, Leek & Vegetable Soup
- 2 Tbsp Olive Oil
- 3 cloves Garlic
- 2 Brown Onions
- 1 Leek
- 1 Parsnip
- 1 Turnip
- 3 Carrots
- 2 Chicken Breasts
- 6 Middle Bacon Rashers
- 1 Chicken
- Vegetable Stock Cube
- 1 Tsp Salt
- 1 Tsp Ground Black Pepper
- 1 Tbsp Chives
- 1) Roughly chop the vegetables and meat (Chunkier the better) 2) Put Oil, Garlic, Onion, Chives & Leek into a large pot and fry until soft.
- 3) Boil a jug of water.
- 4) Add Chicken & Bacon to the pot and cook for 1 min.
- 5) Add boiling water salt and stock cube to the pot.
- 6) Add Turnip, Carrots, Parsnip.
- 7) Cook on High for 15 Mins 8) Skim the surface of the soup.
- 9) Reduce heat and cook on Medium for 35 Mins.
- 10) Serve & Eat ^_^
