Pepper-Rubbed Pork Chops
- 1 teaspoon cumin ground
- 1 teaspoon salt
- 3/4 teaspoon black pepper crushed
- 3/4 teaspoon white pepper crushed
- 1 pinch cayenne pepper
- 2 teaspoons coriander seeds ground
- 4 cloves garlic finely chopped
- 2 tablespoons olive oil
- 4 each pork loin chops 1/2 inch thick
- Heat broiler.
- Stir together cumin, salt, black and white peppers, cayenne, coriander, garlic and olive oil in a small bowl until well mixed.
- Rub on both sides of chops.
- Broil pork chops 3 inches from gas broiler or 1 1/2 inches from electrice broiler, turning once, until crispy on the outside and still slightly pink near bone, about 15 minutes total cooking time.
