Savory Sauced Chicken
- 1 small onion, sliced and separated into rings
- 1 Tbsp. butter or oleo
- 1 c. vegetable juice cocktail
- 2 Tbsp. snipped parsley
- 1 Tbsp. cornstarch
- 1/4 tsp. dried marjoram, crushed
- 1/4 tsp. dried basil, crushed
- 2 whole small chicken breasts, skinned and halved lengthwise
- 2 Tbsp. grated Parmesan cheese
- In saucepan, cook onion in oleo until onion is tender but not brown.
- Combine vegetable juice cocktail, parsley, cornstarch, marjoram and basil; stir into onion mixture.
- Cook and stir over medium heat until mixture is thickened and bubbly.
- Cook and stir 1 to 2 minutes more.
- Arrange chicken breasts in an 8 x 8 x 2-inch baking dish.
- Pour sauce mixture over chicken.
- Bake, covered with foil, in a 350u0b0 oven for 50 to 55 minutes or until chicken is tender.
- Remove foil; sprinkle with Parmesan cheese.
- Bake 5 to 10 minutes more.
- Makes 4 servings.
