Spinach and Yogurt Dip

  1. Heat the oil in a large skillet.
  2. Add the onion and garlic and saute over low heat until lightly golden.
  3. Add the spinach, in batches if need be, cover, and cook briefly, just until it wilts.
  4. Remove from the heat, and stir in the yogurt.
  5. Season with salt and pepper, and serve.
