Spinach and Yogurt Dip
- 1 tablespoon light olive oil
- 1 small onion, minced
- 2 to 3 garlic cloves, minced
- 10 to 12 ounces fresh spinach, well washed, stemmed, and coarsely chopped
- 1 cup low-fat plain yogurt or soy yogurt
- Salt and freshly ground pepper to taste
- Heat the oil in a large skillet.
- Add the onion and garlic and saute over low heat until lightly golden.
- Add the spinach, in batches if need be, cover, and cook briefly, just until it wilts.
- Remove from the heat, and stir in the yogurt.
- Season with salt and pepper, and serve.
