Sour Cream Pumpkin Coffeecake Recipe
- 1/2 c. butter
- 3/4 c. sugar
- 1 teaspoon vanilla
- 3 Large eggs
- 2 c. all-purpose flour
- 1 teaspoon baking pwdr
- 1 teaspoon soda
- 1 c. lowfat sour cream
- 1 3/4 c. (16 ounce.) pumpkin
- 1 beaten egg
- 1/3 c. sugar
- 1 teaspoon pumpkin pie spice
- Cream butter, 3/4 c. sugar and vanilla.
- Add in 3 Large eggs.
- Combine dry ingredients then add in to batter mix alternately with lowfat sour cream.
- Combine last 4 ingredients.
- Spoon 1/2 batter into greased 13x9 dish.
- Spread to corners.
- Sprinkle 1/2 streusel over.
- Spread pumpkin mix over.
- Spread remaining batter over.
- Sprinkle streusel over top.
- Bake at 325 degrees 50-60 min or possibly toothpick in center comes out clean.
