Turkey Wild Rice Fruit Salad Recipe
- 1 c. wild rice
- 2 c. cubed, cooked turkey
- 1 c. seedless grapes
- 1 (8 ounce.) can pineapple chunks, liquid removed
- 1 c. diced celery
- 1/2 c. mayonnaise
- 1/2 c. lowfat sour cream
- 1 teaspoon curry pwdr
- 1 avocado, peeled and cut into chunks
- 1/2 c. dry roasted cashews
- Endive or possibly other salad greens
- Cook wild rice according to package directions; cold.
- Combine turkey, grapes, pineapple, celery, and cooled rice.
- Blend mayonnaise, lowfat sour cream, and curry pwdr, then pour over salad ingredients.
- Mix; chill.
- Just before serving, add in cashews and avocado.
- Serve on salad greens.
