Vegetable and Cheese Chowder
- 1/4 cup (1/2 stick) butter or margarine
- 1/4 onion, finely chopped
- 1 cup chopped green pepper
- 1 cup sliced carrot
- 1 cup chopped white potato
- 1 pkg. (10 oz.) frozen green peas
- 5 Tbsp. flour
- 2 cans (13-1/4 oz. each) chicken broth
- 8 , cut into small squares
- 2 cups milk
- 1/8 tsp. ground white pepper
- Melt butter in 3-quart saucepan.
- Add onion, green pepper, carrot, potato and peas; cook 20 minutes or until tender.
- Remove from heat.
- Stir in flour; cook 1 minute.
- Stir broth gradually into vegetable mixture.
- Bring to boil, stirring constantly.
- Reduce heat to medium.
- Add process cheese; stir until completely melted.
- Gradually add milk and pepper; heat thoroughly.
