Mom's Rhubarb Pie
- 4 cups rhubarb
- 2 cups sugar
- 2 eggs
- 1 tbps. flour
- 2 teaspoons vanilla
- 1 pinch salt
- double crust, 9-inch pie
- Pour boiling water over cut-up rhubarb, and let stand for a couple of minutes, then drain.
- Add flour, sugar and salt to beaten eggs, then add vanilla.
- Stir all ingredients into rhubarb.
- Put into double pie crust.
- Bake in preheated oven at 400F for 45 minutes.
- While hot sprinkle with sugar.
