Mom's Rhubarb Pie

  1. Pour boiling water over cut-up rhubarb, and let stand for a couple of minutes, then drain.
  2. Add flour, sugar and salt to beaten eggs, then add vanilla.
  3. Stir all ingredients into rhubarb.
  4. Put into double pie crust.
  5. Bake in preheated oven at 400F for 45 minutes.
  6. While hot sprinkle with sugar.
