Tarragon Salmon
- 4 (6 ounce) salmon fillets
- 12 cup cherry tomatoes, diced
- 14 cup honey dijon mustard
- 1 piece scallion, chopped
- 1 tablespoon fresh tarragon
- 1 garlic clove, minced
- salt and pepper (optional)
- Heat oven to 450F.
- Place filets on a foil-lined jelly-roll pan and season with salt and pepper to taste.
- In a bowl, combine the rest of ingredients.
- Spread over the filets.
- Bake 10 minutes or until fish flakes.
