Traditional Welsh Rarebit
- 1 slice bacon
- 1 tomatoes
- 2 ounces cheese
- 1 teaspoon milk
- 1 pinch mustard
- shake pepper
- 1 tablespoon pickle
- 2 slices bread
- butter
- Heat the grill.
- Lightly grill the bacon, if used.
- Slice the tomatoes, if used.
- Grate the cheese and mix into a stiff paste with the milk in a bowl, stirring in the mustard and pepper.
- Lightly toast the bread, and spread one side with butter, then generously cover it with the cheese mixture.
- Put under the hot grill for 1-2 minutes, until the cheese starts to bubble.
- Top with the bacon, tomato slices, or pickle, and return to the grill for another minute, to heat the topping and brown the cheese.
- Serve at once.
